Potato croquettes

Ingredients (4 serving)

  • * 4 potatoes for « French fries and mashed »
  • * 2 spoons of soured cream
  • * 2 carrots * 1 egg
  • * 100 g of grated cheese
  • * breadcrumbs * deep frying oil

Préparation

Cook the potatoes for 15 minutes then mash them in a food mill. Add the cream, grated carrots, grated cheese, egg and salt.

Make small buns and cover them with breadcrumbs. Deep-fry them in the oil. When they’ll turn golden brown, take them out and let them dry on the kitchen papers.

Serve as a starter with tomato sauce or as a side dish while they’re still hot.

Tips: If you mash the potatoes with blender it will be more smooth. You can also use parsley or chives instead of carrots.
