Potato salad with bacon

Ingredients (4 servings)
- * 6 salad potatoes or Annabelle
- * 250 g of bacon (cut into smaller pieces)
- * 1 salad of your choice
- * chives
- * mayonnaise
- * Salt & pepper
Cook the potatoes in salted water. Put a few leaves of salad at the bottom of your plates. Peel the potatoes and slice them. Spread the slices over the salad.
Fry the pieces of bacon, let them dry on a kitchen paper and add them to the potatoes. Put three spoons of mayonnaise in a bowl and add a little bit of water. Mix it up and use a fork to beat it to a foam. Add a few spoons of mayo to the potatoes before serving. Don’t forget to season the meal with salt and pepper. Garnish it with chopped chives. Serve lukewarm.
Tips: You can use duck confit instead of bacon and you can sprinkle the salad with nuts.
