Ingredients (6 servings)

  • * 6 potatoes for baking/soup
  • * 200 g of cottage cheese
  • * 1 onion * 1 pepper
  • * 6 slices of bacon
  • * 1 clove of garlic
  • * 1 spoon of pepper spice
  • * 1 spoon of curry powder
  • * Salt & Pepper

Preparation

Preheat the oven to 180°C.
Wash the potatoes and pierce them with a fork.

Put it into the oven for about 50 minutes. Rinse the pepper, remove the core and cut it into small pieces. Peel and cut the onion. Peel the garlic. Slice the bacon into long strips.

Mix together pepper, onion, garlic and bacon in a bowl. Add cottage cheese. Season with salt and pepper. Sprinkle with curry powder and pepper spice. Put it in a fridge..

Take the potatoes out of your oven. Cut lenghtwise in halves and scoop out a little bit of the pulp. Fill the halves with the cottage cheese mix and serve right away. You can add some of the scooped out pulp into the cottage cheese mix before filling the potatoes.
